Chicken sausage & bean casserole.
I cooked this for my friends & Sunday. And one of my girls does not eat pork. So I whipped out some chicken sausages from the freezer (which if I’m honest are leaner & lower in fat than pork sausages plus packed with protein). This dish can is CHEAP & can feed a whole army. Any left overs freeze them!!!
In the slow cooker -
Chopped celery, onion, garlic, carrots (I didn’t even peel them, couldn’t be asked and adds to the flavour 😉), chopped chicken sausages, tin of chopped tomatoes, chicken stock, mushrooms, kidney beans, butter beans, 2 teaspoons of smoked paprika, 1 teaspoon of ground cumin, 2 teaspoons bouillon, sprinkle of mixed herbs. cooked this in the slow cooker for 5 hours. And served with couscous & steamed greens. , could serve with brown rice. Garnish with fresh parsley and natural Greek yoghurt on top.
